The meze way of eating is one of the most basic dining experiences in the whole Mediterranean, one that traces its roots to the banquets of ancients, Where small plates were served and shared by all. The meze means "middle" As in middle of the day, or between meals, because the meze table traditionally was not meant to be a full meal. Rather it was something that fell in the middle of the day or before dinner. Meze dining is like a game, the object is to whet the appetite not sate it, the whole point is to tease the appetite before the day' s main meal. The various Dishes served up together as mezes, therefore, must be comprised of a variety of textures, temperatures and flavours. But, the most important thing to remember about the meze tradition is that it goes hand-in-hand with the Mediterranean lifestyle. Foods that are meant to be savored and shared by friends and family in a leisurely and relaxed atmosphere.
